Sie wurden vor rund 300 Jahren in Bordeaux erfunden, weil die Winzer zur Kl\u00e4rung des Weins viel Eiweiss brauchten und man das Eigelb ja irgendwie nutzen wollte. Heute wird nicht mehr oft mit Eiweiss gekl\u00e4rt, die Canel\u00e9s de Bordeaux sind zum Gl\u00fcck erhalten geblieben. Den Namen \u00abCanel\u00e9s\u00bb erhielten sie ihrer Rillen wegen, \u00abcanellures\u00bb auf Franz\u00f6sisch. Solche senkrechten Rillen sieht man auf antiken S\u00e4ulen oder als Dekoration im M\u00f6belbau. Traditionell werden Canel\u00e9s-Formen aus Kupfer verwendet, aber auch eine gew\u00f6hnliche Silikon- oder Papier-Formen f\u00fcr Muffins f\u00fchren zum Canel\u00e9s-Gl\u00fcck. Dazu passt ein Glas S\u00fcsswein aus Sauternes perfekt.\r\n\r\n<strong>Rezept f\u00fcr 16 kleine Canel\u00e9s de Bordeaux: <\/strong>\r\n\r\n<strong>Zutaten\r\n<\/strong>1 ganzes Ei\r\n1 Eigelb\r\n5dl Milch\r\n50g Butter\r\n120g Mehl\r\n250g Zucker\r\n1 Vanilleschote\r\n\r\n<strong>Zubereitung\r\n<\/strong>Die Milch mit der Butter zum K\u00f6cheln bringen. Inhalt der Vanilleschote dazugeben. Ei und Eigelb mit Zucker verquirlen und dann mit dem Mehl vermischen. Die Vanillemilch dazugeben und verr\u00fchren. Diesen Teig 1 Tag im K\u00fchlschrank ruhen lassen. Backofen auf 180 Grad (Umluft) heizen. Den Teig nochmals aufr\u00fchren und die F\u00f6rmchen nur zu 3\/4 damit auff\u00fcllen. Die Canel\u00e9s rund 45 Minuten backen \u2013 bis die K\u00fcchlein sch\u00f6n braun sind.
