In Restaurants wird sie als Primo serviert. Zuhause gibt die Suppe einen Hauptgang her. Besonders gut in der kalten Jahreszeit. Im Sommer auch lauwarm oder kalt zu geniessen.\r\n<\/strong>\r\n\r\nF\u00fcr 4 Personen\r\n400g getrocknete weisse Bohnen \u00fcber Nacht in kaltem Wasser einweichen und abtropfen\r\n2 Salbeibl\u00e4tter, frisch\r\n1 Knoblauchzehe\r\n3 EL Oliven\u00f6l\r\n80g Nudeln, m\u00f6glichst breit (z.B. Maltagliati)\r\n1 Bund Glattbl\u00e4ttriger Peterli (Prezzemolo), gehackt f\u00fcr Garnitur\r\n\r\nDie Bohnen in einem Topf mit kaltem Wasser bedecken und zum Kochen bringen. Bei kleiner Temperatur ca. 2 Stunden k\u00f6cheln. Die H\u00e4lfte der Bohnen rausnehmen. Die andere H\u00e4lfte p\u00fcrieren. In einer Bratpfanne im Oliven\u00f6l den Knoblauch und die Salbeibl\u00e4tter and\u00fcnsten. Die p\u00fcrierten Bohnen dazugeben und 1.5 Liter Wasser.\r\n\r\nMit Salz und Pfeffer abschmecken. Anschliessend die ganzen Bohnen dazugeben. Die Suppe zum Kochen bringen und anschliessend die Nudeln mitkochen, bis sie nach ca. 10 Minuten al dente sind.
